My Style Baingan Bharta
Baingan Bharta is a roasted brinjal recipe specially made in the northern part of India.Here we are going to prepare it in our style yet yummy bharta which turned out to be the favourite dish of my husband.Every time he ask me to prepare this dish I was too busy else we won't get this big baingan.This lockdown we got this baingan and I got a opportunity too.
Let's start preparing the baingan bharta .....
INGREDIENTS FOR BAINGAN BHARTA
Big Baingan- 1 No
cumin seeds - 1 tbsp
Ginger garlic paste - 1 tbsp
Salt to taste
green chilly - 2 no
Curry Leaves - Few
Onion finely chopped (big) - 1 No
Tomato (big) - 1 no
Turmeric powder - 1/2 tbsp
Chilli Powder - 1 tbsp
Coriander Powder - 1 tbsp
Garam Masala - 1/2 tbsp
Kastoori Methi - 1/2 tbsp
Oil as required
Fresh chopped Coriander leaves - few
Tap some oil over the baingan and roast it over the gas stove on all sides.Once all sides are fully cooked.Put it in cool water so it will easy to peel off the skin.
Remove the skin and mash it with a fork to a fine paste like consistency.
In a pan add oil once hot add cumin seeds and curry leaves,let it splutter add chopped onion and green chilly.Saute it till colour changes add ginger garlic paste.Saute it till raw smell goes off.
Add all the masalas and little water so the masala get cooks well.
Add chopped tomatoes and cooked till it mashed well.
Add mashed baingan and add water as per the consistency and cook till it is thick.
Add kastoori methi and cook for 5 mins.
Add fresh chopped coriander leaves and Baingan bharta is ready to serve with chappati and shallots.
