Keto Idly with Thiyal

Idly is actually a south Indian dish but it's popular across the country. This super food is primarily prepared using rice batter therefore making it non keto friendly.But here we are going to try this super food as our keto friendly dish.
Lets try our delicious keto idly......

INGREDIENTS FOR KETO IDLY
Desiccated coconut - 1 cup
Eggs -2
Salt - 1 pinch
Baking powder - 1 pinch
Coconut oil -4 tbsp
INSTRUCTIONS:
In a bowl add desiccated coconut powder , 2 eggs , Baking powder , Salt for taste.
Give it a nice blend and your batter should be ready.
keep it aside for 10 mins or so.
After 10 to 15 mins pour the batter in the idly plates and place it in a idly cooker.
Let it cook for 10 to 15 mins.
Your keto idly is ready.
Keto Idly is best served with coconut chutney.But here for a change I have served with thiyal.
Keto Idly is very ease to prepare and tastes delicious.
INGREDIENTS FOR THIYAL
Fresh grated coconut - 1 cup
curry leaves - few
Shallots - 3 nos
Pepper - 10 nos
Chilli Powder - 1 tbsp
Coriander Powder -2 tbsp
Tamarind - small gooseberry size
Brinjal - 3 nos
Drumstick - 6 pieces
INSTRUCTIONS:
Fry the freshly grated coconut,curry leaves,pepper,shallot in a pan till it becomes golden brown.Add chilli powder and coriander powder once you switch off the stove and stir all the mixture and keep it to cool down.
Soak the the tamarind in water.
Once the mixture is cool grind it to fine paste.
In the pan add the washed brinjal and drumstick pieces also the paste then add tamarind juice and water as required .First add as much water to make the gravy liquid ,once the gravy is boiled it will be thick.
Add salt as per taste,Let the gravy cooks for 15 to 20 mins.
Once done prepare tadka for the thiyal.
In a pan add 2 tablespoon of oil,Once the oil is hot add mustard seeds.Let it crackle, add curry leaves, vendayam , some shallots.Fry until everything turns brown then add it to thiyal.
Hot and tasty thiyal is ready.
